Heading South

~ Highlight of the Day: Successfully printing out 24 beautiful pages of plant pictures ~
 
There are only 8 days between now and when I leave for Alabama. That's 8 days to make sure I know 146 interior plants forwards and backwards. 8 days to get ahead in all my classes so I can survive missing a week. . . 

I am so excited :)
 
First of all, I've never been further south than Tennessee (in the east. . . New Mexico and Arizona hardly count), and though I've learned of the 'Deep South' in my various American History classes, I've lately developed this desire to actually experience it.
 
I'm sure the south is quite normal. But honestly, when I think 'South', I think 'To Kill a Mocking Bird', and 'Beautiful Creatures', and 'Sweet Home Alabama', and that's all I got.
 
So I'm really looking forward to spending some time in Alabama.
 
Not to mention I'm going to totally rock my competition.
 I spent a good two hours today cutting out pictures of interior plants:
 


And tomorrow I'll spend many more hours gluing them onto flashcards - and once I have the names on them these flashcards won't be leaving my side till I'm walking into the test, ready to ace it.
 
Yep. That's my plan, and I'm stickin' to it :)

Let it Snow. . . But Not On The Weekends

~Highlight of the Day: Finally getting to put my hair up after leaving it down for all of church :) ~
 
I love sleeping in. If I had been able to do it this morning, it would have been the highlight of my day. But I also like money. And having a job kinda facilitates that . . . so instead of sleeping in this morning I got up (at 4:40am. . . yea. . . ), put on my snow boots, and shoveled snow for a couple of hours.
 

Just look at that cleared path! It's a pretty good lookin' brick walk, if you ask me :)
 
Also, I've been meaning to take pictures of the duck pond for a while now. . . just for fun (and I like the ducks), and I actually remembered to bring my camera today!
 
So I was taking pictures of the pond. . .

and then the new Life Sciences building. . .


and then the walk home, and the mountains. . .
 

 
And then I got home, and saw that someone had made a snowman-on-a-stick, and despite having looked at nothing but snow for the past 4 hours I still found it funny. So I took a picture of it too.
 
 
You know, I really do love snow. Especially when it comes down in big fluffy chunks. But I also liked water too, before I chugged two liters of it.
 
I LOVE SNOW.

All Things Kumquat

Highlight of the Day: Sleeping in for the first time in two weeks, and waking up to the sound of my banjolele :) ~

kum-quat [kuhm-kwot] noun

1. a small, round or oblong citrus fruit having a sweet rind and acid pulp, used chiefly for preserves.
2. any of several citrus shrubs of the genus Fortunella, native to China, that bear this fruit.

 It's like a little orange, but you eat the skin, because it's the sweetest part. You can eat the middle too. If you want. It's kind of really sour though. And full of seeds.

I am lucky enough to have an awesome grandma who not only has a kumquat tree in her backyard, but who brought two gallon sized bags of them all the way from California to Utah, just 'cuz she knew I loved them!
 
Last year, after I'd eaten the last kumquat of the season, I had this most spectacular vision of a candied kumquat. But I didn't have any kumquats, and I couldn't really find a recipe for it. So I sighed a great big ol' sigh and distracted myself with an internship in Philadelphia and a study abroad in Jerusalem. . .
 
And then, just the other day, I stumbled across this site.
And my intense need to try it hit me like a train. Luckily it was only a few days later that I got a call from Grandma with the news that she and Grandpa would be driving through in a day or so.
 
So here it is, a candied kumquat recipe, complete with badly taken pictures, and commentary :)
 
Candied Vanilla-Poached Kumquats
Ingredients:
 
2 pounds kumquats, stems removed
4 cups water
 4 cups sugar
1 vanilla bean
 
Directions
1.      Fill a medium-sized heavy bottom saucepan halfway with water and bring up to a boil over high heat. Drop the kumquats in the boiling water and blanch for one minute. Drain the kumquats over a colander and discard the blanching water. Clean and dry the pot.
2.      Put the sugar in the pot and add the 4 cups of water. Split the vanilla bean lengthwise with a pairing knife and scrape the seeds with the back of the knife. Put the vanilla pod and seeds into the pot. Bring to a boil over medium-high heat. Reduce the heat to medium and add the blanched kumquats. Simmer the kumquats in the syrup for 45 minutes to 1 hour or until the skin of the kumquats is soft and translucent.
3.      Remove the the candied kumquats to a glass container. Simmer the candying liquid over medium-low heat for another 10 minutes or so until it resembles a thick syrup. Pour over the kumquats and let sit until cooled. Cover and store in the fridge. They will keep for several weeks.
The kumquats and the syrup can be used as a dessert topping, in cocktails and in various sweet and savory dishes.
Yields 2 pounds candied kumquats.
 
I cut mine in half and took the seeds out. because
 I didn't want to deal with them later.

 
I had every intention of growing all these cute little seeds too. . .
 but I didn't get around to it. . .
 
 
Anyway, here's the blanching.
 
 

And the draining. Super interesting, I know.
 
 
And here's boiling them in sugar water!
 This part was fun.
 
 
It took quite some time - about 40-45 minutes - to simmer it down thick enough
 
 
Do you see that? How cool is that?! The sugar totally inundated the insides, which is better than keeping them whole, if you ask me :) It was way interesting to watch how they changed from all fruity to clear and candied, even if it took a day and a half!
 
 
And I even found the perfect little jar to put them in! I was so proud of these that I carried the jar around with me the rest of the evening . . . They're just so pretty. . .
 
You know what else? They taste great. The skin's a little tough (don't ask me why), but they still taste like kumquats - just really sugary ones :) and they're perfect with ice cream.
 
So there you go - the mighty kumquat, in all it's glory :)

First Full Week In February

~ Highlight of the Day: Listening to the council and direction of Elder Bednar*~
 
That this has become a post-only-once-a-week blog is, for me, a serious cause for lamentation. I want so bad to post more. Just short ones. 'Cause short and sweet is so much better than an occasional, long winded catch-up post.
 
But I just can't do it!
There is not enough time in the day.
 
Perhaps during the summer I can devote more time to this sort of thing. Besides, summer is going to be way more exciting. Have I mentioned my class schedule for spring term? It's the best :P

(Beginning. . . because they never offer Intermediate)
 
 
Oh yeah. It's going to be awesome. And I wish I could say I'm taking a ton of fun classes Summer semester too, but I'm not. I'm not sure I'll take any, actually. We'll see.

Well, I was especially productive this week. I spent some birthday money on a coat from Plato's Closet. . . (Why I have never been to this place before now is a mystery to me - it's awesome)

Then I learned how to cook these thingies.
I'm not sure if I like them better raw or cooked.
I'll have to get back to you on that one.
 
And I got a sweet pair of 2D glasses. Probably the best birthday gift ever.
Now if I ever have to sit through a 3D movie, I can still watch it in 2D :) 

And I will be composing a post devoted completely to kumquats in the near future. I would have done it tonight but I ran out of time. It will be a good one, just you wait and see :)


* We had the great fortune of having Elder Bednar attend our Stake Conference this weekend. I got to listen to him both on Saturday and on Sunday, and both times I was just blown away by the  power of his testimony, and the clear reasonings he gives for doctrinal principles. I will have to expound upon all the many things I learned from him later, when it's not so late at night. . .

So Busy

~ Highlight of the Day: a really early trip to the Provo Temple* - it has been way too long ~

Whew. This week has really been a full one!
How does life sustain such business? How in the world can I come up with so much to do, and still fill half my time with other things? I suppose I knew it was going to be like this. I am working as many hours as BYU lets me, and taking almost as many credit hours as well.

But this week the weather decided to wreak havoc on my sleep schedule.
And family was in town.
And it was my birthday.
And homework began in earnest.
And it took longer to get everywhere due to the snow.

So hopefully this is week is the exception and not the norm :)
Despite a distinct lack of down time, it was still a pretty good week:

Went shopping . . .

took my weights final at the testing center. . .

shoveled this hill for hours while it snowed and undid all my work :)

Spent way too much time on my drawing homework

had a birthday party!

made a small bonfire on the ice. . . :)

and enjoyed the fire despite it being freezing cold

Then I spend a good hour or two reveling (studying :) in the glories of the
 greenhouse with my camera. . . I love plants.




In just one short month I'm going to know the scientific names of 150 interior plants,
how to spell them, and how to identify them. Just you wait and see :)  


*I cannot wait till they get the Provo Tabernacle finished and built into a temple.
The Provo temple gets so busy - even at 7am on a Saturday!

Freezing Rain. Right.

~ Highlight of the Day: Studying in the greenhouses - it's warm there. And green :) ~

 Bright (ok, not so bright, still kind of dark) and early this morning my roommate and I woke up and walked to campus for our Soil Science lab. Our topic of discussion on the way up the hill was the freezing rain that had been predicted to fall on Provo at 6am. We shrugged off the fact that it was 7am (and not raining), and went to class.
 
After class we emerged from the depths of the Widtsoe Building to discover something somewhat  similar to this:
 
 
Then I spent the next several hours applying ice melt and salt :)
And I'll be right back at it come 5 O'clock tomorrow morning.
Gotta love working for grounds!

Cabbage Soup

~ Highlight of the Day: Dinner. I love experiments that go right :) ~

COOKING BLOGS!
 
Ok, so I've already been blogging about food off and on for some time now, I know. But today I actually took time to take a fancy ingredients-all-gathered-together-artisticly picture. And this happens to be my favorite recipie right now. So here it is:
 
Cabbage Soup
 
Ingredients:
  • One thingy of Italian sausage (the big one or the small one, doesn't matter :)
  • One head of cabbage
  • A good amount of carrots
  • Onions or Celery or anything else floating around the fridge
  • Kale - the curly awesome stuff
  • Chicken broth (however much you feel necessary)
  •  
    Directions:
     
    1. Cook sausage in a frying pan on medium heat until well done.
         Saute onions with the sausage if desired.
    2. Assemble the cabbage (sliced), carrots (chopped), and the kale (torn).
    3. Add sausage, carrots, cabbage, and chicken broth together in a large pot.
    4. Add water untill it is just visible.
    5. Bring to a boil and then bring down to low and let simmer for 30 minutes.
    6. Add kale and simmer for 5 more minutes.

This soup is soooooo good! And it's what I'll be
living off of for the next week and a half :)
